( Vareniki «lenivye»)
Serves 4
- 1.3 lbs farmers cheese
- 1 egg
- 6 tablespoons flour for the dough
- 2 tablespoons sugar
- 0.5 teaspoon salt for the dough
- 1 teaspoon salt for the cooking water
- 2 tablespoons flour for dusting
- 2 oz butter
- 4 tablespoons sour cream
The very name of these simple yet delicious dumplings suggests that they require a lot less work compared to the traditional vareniki which command time, skill and effort. In this recipe all you have to do is mix all ingredients together – and voila!
You can even make these lazy vareniki for a quick and easy breakfast.
Place the farmers cheese into a bowl.
Add the salt.
Pour in the sugar. If you wish, you can add a bit of vanilla.
Add 6 tablespoons of flour.
Beat in the egg.
Stir everything well with a fork.
Let the dough sit in the bowl for 15 minutes.
Dust the work surface lightly with the flour, then transfer the dough there.
Divide the dough into 4 parts.
Roll each part into a tube about 1 inch thick.
Slice the dough roll into 3/4-inch-wide pieces with a sharp knife.
Boil the cooking water in the pan, add the salt.
Drop the dough pieces into the boiling water one by one.
Stir them right away to prevent sticking.
Once all the dough is in the pan, bring to a second boil and cook for another 2-3 minutes.
Once the vareniki are cooked, they’ll float to the surface.
Take out of the pan with a slotted spoon.
Divide between the serving plates.
Add a small piece of the butter and a tablespoon of the sour cream to each plate.
