(Морковные котлеты, Morkovnye kotlety)
For 6 burgers:
- 1.3 lbs carrots
- 1 tablespoon sugar
- Half a cup water
- Half a teaspoon salt
- 1 egg
- 2 heaping tablespoons dry semolina (cream of wheat)
- 2 tablespoons flour (for dusting)
- 6 tablespoons vegetable oil
Peel the carrots and finely grate.
Place into a skillet.
Add the sugar.
Pour in half a cup of the water.
Cook over the medium heat stirring periodically.
Continue cooking till the carrots change color and all the liquid evaporates.
Transfer the carrots into a bowl.
Add the salt (half a teaspoon).
Break an egg into the carrots.
Pour in the semolina.
Mix well and set aside for 30 minutes for the carrots to cool and the semolina to swell up.
Divide the carrot mixture into 6 equal parts.
Place a skillet over the medium fire.
Pour in the vegetable oil and heat it up for 2-3 minutes.
Shape the carrot mixture into balls.
Flatten them with your hands to shape them into round patties.
Roll the patties in the flour on both sides and transfer to the skillet.
Cook the patties for 3-4 minutes on each side.
The patties are very soft – you’ll have to use a very thin spatula to carefully turn them over.
Serve the patties on their own.
The patties have a delicate and slightly sweet taste, so the best sauce for them would be cream or sour cream.
